Kale Power Salad
Posted on by Hope HughesA delicious recipe I tried from Blythe Raw. I made this a side for Thanksgiving and it was simply amazing! The only thing I did to modify this recipe was scale back on the oil. It was a bit too much for me, so I added just enough to coat the leaves and add flavor. Make sure to use a high quality olive oil -trust me, it makes all the difference!
- 1 bundle black kale
- 1 avocado
- 2 tomatoes
- 1 cucumber
- ½ cup raw olives
- 3 cloves garlic
- ¼ cup cold pressed olive oil
- 1 Tbsp yellow mustard
- 1 Tbsp nama shoyu
Rip and de-stem kale. Top with olive oil, nama shoyu, and yellow mustard. Massage into kale for 1 minute. Dice tomatoes, cucumbers, add to salad with raw pitted olives. Minced garlic on top and toss together. Diced avocado to top salad.
