Kale Power Salad

A delicious recipe I tried from Blythe Raw. I made this a side for Thanksgiving and it was simply amazing! The only thing I did to modify this recipe was scale back on the oil. It was a bit too much for me, so I added just enough to coat the leaves and add flavor. Make sure to use a high quality olive oil -trust me,  it makes all the difference!
  • 1 bundle black kale
  • 1 avocado
  • 2 tomatoes
  • 1 cucumber
  • ½ cup raw olives
  • 3 cloves garlic
  • ¼ cup cold pressed olive oil
  • 1 Tbsp yellow mustard
  • 1 Tbsp nama shoyu
Rip and de-stem kale. Top with olive oil, nama shoyu, and yellow mustard. Massage into kale for 1 minute. Dice tomatoes, cucumbers, add to salad with raw pitted olives. Minced garlic on top and toss together. Diced avocado to top salad.
